Drain the macaroni when cooked and set aside. Add ¼ C ghee or dairy free butter to the empty pasta pot and heat over medium heat. When the ghee is melted, whisk in the gluten free flour and cook for 1 minute. Slowly pour and whisk in the LACTAID® milk. Heat the milk, whisking almost constantly until it comes to a simmer. Add the non-dairy creamer and the almond/rice milk. Continue to whisk to blend well on medium heat. You should have a nice white sauce. Add the Daiya cheese. Stir until completely melted (no lumps). This may take longer than expected-Daiya cheese takes much longer to melt entirely than real cheese.

Then, pour in the milk. But DO NOT STIR. Just pour it in and walk away. This will help eliminate the risk of getting the burn warning. You can use regular milk or evaporated milk. I’ve made it with both. If using regular milk, I highly recommend 1% or higher (as in, leave the skim milk for other nefarious purposes). Combine macaroni, almond milk, water, grated onion, sea salt, garlic, onion powder and pepper in a 2-quart glass baking dish (or 8x12' but 9x13' will be too large unless you 1.5x this recipe). Add macaroni; cook 2 to 3 fewer minutes than manufacturer's directions, until outside of pasta is cooked and inside is underdone.

Now, I can’t take credit for this yummy recipe on my own…my best friend, the Tarabelle (I can’t believe we’ve been friends for over 2 decades! Holy cow that makes me feel old now!) Anyway, the Tarabelle is one of those friends that you don’t see for years and once you get together it’s like a day hasn’t passed!

Anyway, one day the Tarabelle decided she wanted to make mac and cheese for dinner but didn’t realize she had no milk left….oops. So she brilliantly came up with this fantastic substitute– that I’ve started using even when I do have milk. Nba 2k12 soundtrack. Best Mac And Cheese Recipe

I like this recipe for a lot of reasons. It’s super easy, fast, cheap, and allows for endless customization. But best of all, it reminds me of the blue-box version my mom used to make when I was young. We all know this box. Delicious when you’re age 8, but tastes more like chalky nostalgia in your 20s.

Milk Free Mac And Cheese

The process is exactly the same for this recipe, only I’ve substituted high quality, diet-friendly ingredients for stuff in the box. The starchy pasta water helps everything bind together without the need for milk. I can usually tolerate a small amount of butter without my body staging a coup d’etat, but if your dietary sensitivities are more severe, a substitute like Earth Balance works fine. I like using Daiya vegan cheese and use a combination of 60:40 cheddar to mozzarella to add a clingy thickness to the sauce, plus gluten-free noodles, but the recipe is essentially a template. Modify however you see fit — regular pasta, different varieties of vegan cheese, add blanched peas or sautéed kale…the world is yours.
